Beef Casserole with Cabbage and Cheese

This hearty combination of seasoned ground beef, bell pepper, tomatoes, and cabbage is a simple main dish that will serve a small crowd. The flavors are reminiscent of cabbage rolls, but the casserole is much quicker and easier to throw together. Topped with cheddar cheese, it’s a naturally gluten-free and grain-free dish.

The prep for cabbage casserole can be done ahead of time for a quick dinner. Make the filling—cooking the beef mixture and boiling the cabbage—and combine it in the baking dish, leaving off the cheese. Cover tightly and refrigerate until ready to bake, a few hours or even overnight. Following the baking instructions as written, adding about 5 minutes to the bake time.

Prep. time: 15 minutes / Cook time: 30 minutes / Serves 8

2 lb. Cauliflower
8 oz. Softened cream cheese 1 lb. Ground beef
1⁄2 Onion, diced
1 tbsp. Worcestershire Sauce 1 cup Shredded cracklings

1 Big egg
2 cup Cheddar cheese, grated 5 oz. Bacon
Salt and pepper, to taste
Extra side dish: chopped onion

1. Cut the bacon, and then fry it in a hot frying pan. Put it on a paper towel to absorb excess fat. Remove most of the fat from the pan, you will need only a few tablespoons.

2. Fry the onions in bacon fat until it is golden brown.

3. Add ground beef and fry well. Add the Worcestershire sauce and, if necessary, seasonings. Transfer the mixture to a large bowl.

4. In a separate bowl, mix the cabbage and cream cheese, then whisk everything together using a hand mixer or blender. The consistency of everything should be like mashed potatoes. If necessary, add seasoning.

5. Add chopped bacon and egg to beef mixture and mix well.

6. Place the ground beef on the bottom of the baking dish, and put the cauliflower puree on top.

7. Sprinkle casserole with chopped cheddar cheese and bacon.

8. Bake at 400 °F for 30 minutes.
9. If you want, sprinkle the finished dish with chopped onion.
