Almond Pancakes with Shrimp and Cheese

It’s always nice when the best version of a recipe is also the easiest. After testing many almond flour pancake recipes that always came out unbalanced in different ways, I now give you the most texturally and *tastily* superior one of them all. Oh, and they are gluten-free, in case you’re wondering.

Prep. time: 10 minutes / Cook time: 10 minutes / Serves 8

INGREDIENTS :

1 lb. Shrimp cooked and chopped
2 oz. Almond flour
1 Whisked egg

2 oz. Mozzarella, shredded

3 tbsp. Parmesan cheese, grated 1 tbsp. Fresh dill, chopped
11⁄2 tbsp. Olive or coconut oil, for frying

Salt and pepper, to taste

DIRECTIONS :

1. Mix the shrimp, egg, almond flour, cheese, dill and seasonings in a bowl and mix well until smooth.

2. Using a tablespoon to form pancakes. The size of each depends on your taste.

3. Heat the oil in a pan over medium heat and fry pancakes for 3-4 minutes on each side or until cooked.

4. Put on a plate and serve with herbs and aioli, or any other sauce of your choice.
